Vegetable Dumpling Soup

This vegetable dumpling soup is made with veggies, fresh herbs, and dumplings that are easy to make. Now come to the vegetable soup recipe so, let’s start!

Ingredients 

  • ¼ cup butter (regular or vegan)
  • 1 yellow onion, diced (~1 ½ cups)
  • 1 ¼ cups sliced celery
  • 1 ¼ cups sliced carrots
  • 1 ½ teaspoons Italian seasoning 
  • 1 teaspoon kosher salt
  • ½ teaspoons ground black pepper
  • 1 tablespoon fresh lemon juice
  • 6 cups vegetable broth
  • 3 cups chopped spinach
  • ¾ cup frozen or fresh peas
  • 2 tablespoons chopped parsley

Dumplings

  • 1 cup all purpose flour
  • ½ tablespoon baking powder
  • ¾ teaspoon kosher salt
  • 2 tablespoons butter, cut into half  pieces (vegan or regular)
  • ⅓ cup warm water (~100˚ F)

Step by step Instructions

Vegetable Dumpling Soup

  • Step 1 

In a large pot melt the butter over medium heat. When melted add the onion, celery, carrots, italian seasonings and pepper and salt. Saute for 6-7 minutes or until vegetables start to soften. 

  • Step 2 

Now add the lemon juice and vegetable broth. Bring to a boil, low the heat,cover the pot and boil for 15 minutes.

  • Step 3 

While the soup is boiling, make the dumplings. In a bowl add flour, baking powder and salt and stir them well. In the flour mixture add the butter, by the help of hands cut the butter into the flour make sure no big lumps remain.

  • Step 4 

Add the warm water and by hand continue to mix the dumpling mixture until it comes together. 

  • Step 5 

Stir the peas, parsley, and spinach into the soup. 

  • Step 6 

Form dumplings into small rounded shapes.Then add them to the soup. Simmer the soup again to reduce the heat and cover.

  • Step 7 

Cook the dumplings until they become soft from the outside and chewy on the inside, about 18-20 minutes. Stir the soup frequently or so while the dumplings. Soup ready to serve!

Notes 

  • You can add the other leafy vegetable in the place of spinach like kale or swiss chard.
  • Italian seasoning blends generally contain basil, oregano, rosemary, thyme and sage. If you don’t have this  combination, then you can add in the soup a mix of these dried herbs.
  • If you are not vegan then you can simply add leftover shredded rotisserie chicken or italian sausages.
  • Feel free to add other vegetables like  green beans, corn, broccoli, cauliflower etc.

To store the leftover soup, let it cool to room temperature, then transfer it to an airtight container and refrigerate for up to 5 days. It can be reheated in a saucepan on medium heat. 

For freezing, let the soup cool completely. Then transfer in the freezer bag or a container and freeze for up to 6 months. We don’t suggest reheating the soup in the microwave because the dumplings will disintegrate.
