Is this soup spicy?

Thai Peanut Soup

No, it’s not a spicy soup, the heat of the curry paste is balanced with the peanut butter and coconut milk. As a result of it we get broth that is full of warming spices and aromatic, but not spicy.

Why should we cook the noodles separately?

When we cook the noodles in the soup broth they absorb all the broth and result in a pot full of creamy noodles, that is not soup. Pre-cook them in a salty water and add the noodles at the time of serving. In this way your noodles will be seasoned perfectly and cooked and your soup will stay soupy!

Why did we use low sodium broth in this soup?

Thai Peanut Soup

Soy sauce is salty, and most of the peanut butter also has salt as well. In this recipe when the salt comes from other ingredients so ist better to control the salt. The use of low sodium broth means that we can control our seasoning overall in a better way.

Storage process

You can store your leftover soup. Let the soup cool down, convert it in an airtight container and put it in the fridge for 3 to 4 days. But keep in mind to freeze the soup without noodles. Cook noodles separately and add them at the time of serving.
