This soup is easy to make and has flavors of beans, vegetables and smoked sausages. 

The ingredients you need:

Ingredients 

  • 2 tablespoons olive oil
  • 7 ounces smoked sausage, cut into half moons (turkey, beef)
  • 1 small chopped white or yellow onions
  • 1 medium trimmed and chopped fennel bulb, 
  • 3 garlic cloves, minced and peeled
  • 1 tablespoon tomato paste
  • 1 teaspoon smoked paprika
  • 15 ounces great northern beans (canned)
  • 1 quart low-sodium chicken broth
  • 1 teaspoon dried marjoram or oregano 
  • 3 cups cooked turkey chopped
  • Kosher salt and ground black pepper
  • 1 tablespoon minced fresh flat-leaf parsley (for garnishing)

Step by step Instructions

  • In a 4 to 5 QT Dutch oven heat 1 tablespoon olive oil over medium heat. 
  • Add the smoked sausage and cook until the corners are golden. pour on the plate and set aside. 
  • Add the onion and fennel and sauté for 8 minutes until soft. Stir in the garlic. 
  • Cut the vegetables and put them aside one side and add 1 tablespoon of oil to the clear space.
  • Add one spoon of tomato paste into the oil and sprinkle a big pinch of salt and smoked paprika over the top. Add the tomato paste to let caramelize then add vegetable mixture into the pot.
  • Measure 1 cup beans and set aside the remaining add in the pot with about half of the broth. 
  • In an immersion blender, blend the soup until smooth. Add the remaining broth and beans and oregano or marjoram.
  • Increase the heat and simmer it, then reduce the heat and cook for about 10 minutes. 
  • Stir in the cooked turkey along with smoked sausages. 
  • Taste the seasoning and adjust it according to you with salt and pepper. 
  • Sprinkle the parsley over the soup before serving. 

Recipe Variations 

  • You can add more protein, I like to use leftover turkey breast to add more taste.
  • To make it vegan you can add veggies in the soup
  • You can also use navy beans or black eyed peas instead of white beans.

Green Soup

The best green soup is easy to make and taste guaranteed. This healthy soup will keep you warm in winter cold days and nights. 

Ingredients

  • 2 tablespoons extra-virgin olive oil, (need extra for garnishing)
  • 2 large yellow onions, chopped
  • 1 teaspoon salt, divided
  • 2 tablespoons plus 3 cups water, divided
  • ¼ cup arborio rice
  • 1 bunch green chard (about 1 pound)
  • 14 cups gently packed spinach,  any tough stems trimmed (about 12 ounces)
  • 4 cups vegetable broth, homemade or store-bought 
  • Big pinch of cayenne pepper
  • 1 tablespoon lemon juice, extra to taste 

Step by step guide 

Step 1

In a large skillet, heat 2 tablespoons of olive oil over high heat. Add onion and ¼ salt and cook for about 5 minutes or until the onion starts to brown, stir frequently. Reduce the heat and add 2 tablespoons of water and cover the pot. Cook, stirring frequently until the pan cools, cover the pot again until the onions are reduced and have caramel color about 25 to 30 minutes. 

Step 2

At that time add remaining 3 cups water and ¾ teaspoon salt in a soup pot. Add rice, bring to a boil. Reduce the heat to maintain the boil, cover the pot and cook for 15 minutes. Trim the white ribs of the chard. Chop the chard green and spinach coarsely. 

Step 3

Cook the rice for 15 minutes, then add the chard green. Go to the boil, cover the pot and cook for 10 minutes. When the onions are caramelized add a little boiling liquid into them. Add them with spinach, broth and cayenne into the rice. Return to the simmer, cover and cook, stirring until the spinach is smooth but still green in color, cook about 5 minutes more.

Step 4

Blend the soup in the immersion blender until smooth. You can also use a regular blender. Add 1 tablespoon lemon juice. Taste the soup and add more lemon juice if needed. You can garnish the soup with olive oil.

Our family got a gift of bags of broccoli so I had to make some dishes with broccoli. And my son loves cheese and rice so I decided to make soup in a crockpot. It worked amazingly. Broccoli cutting can take time, you can use frozen broccoli that you melted, but you have to trim the stems off.

This easy and delicious soup is cheese and filled with rice and broccoli. It heaty lunch or dinner on any day of the week. 

Ingredients you need 

  • 1 Medium Yellow Onion (Diced)
  • 1 Tablespoon Unsalted Butter
  • 3 Pounds Fresh Broccoli Florets ( Stems Trimmed)
  • 43 Ounces Canned Condensed Cheddar Cheese Soup 
  • 36 Ounces Canned Evaporated Milk 
  • 10.75 Ounces Canned Cream Of Celery Soup 
  • 1 Teaspoon Freshly Ground Black Pepper
  • ½ Teaspoon Garlic Powder
  • ½ Teaspoon Onion Powder
  • ½ Teaspoon Ground Paprika
  • ½ Teaspoon Ground Mustard
  • 2 Cups Cooked Rice ( Brown, White, Or Wild Rice)
  • 16 Ounces Shredded Cheddar Cheese

Instruction 

  1. In a small frying pan saute the onion in the butter on the stove top until translucent.
  2. At that time wash and trim the broccoli heads, trimming the wood stem of the broccoli well. 
  3. In a 6 quarter or large slow cooker (optional) add the condensed cheddar cheese soup, cream of celery soup and broccoli florets. 
  4. Pour the evaporated milk, spices and onion and stir everything.
  5. Cover the pot and cook on low for 3-4 hours, stir in the middle of cooking time. 
  6. In the last 20 minutes add the shredded cheese and cooked rice and stir and cook for 20 minutes. You must give some time to the cheese for melting. 
  7. Serve the soup in bowls with crusty bread and enjoy!

  • Fresh or frozen broccoli works well, use whatever in your hands. 
  • By using rotisserie chicken you can save your time.
  • Leftover soup is good for the next day’s lunch.

Can I add uncooked Rice to the Soup?

When we tested this recipe with dry uncooked rice the rice either took too much time to absorb the water and broccoli was perfect and the rice under-cooked.   • 8 slices baguette
  • ⅓ cup butter
  • 1 large onion diced
  • 3 ribs celery sliced
  • 1 ½ cups mushrooms sliced
  • 1 green pepper sliced
  • ⅓ cup flour
  • 1 ½ tbsp Worcestershire sauce
  • 4 dashes hot sauce like tabasco
  • 4 cups beef broth
  • 1 cup light cream
  • 8 ounces shredded provolone cheese 
  • 6 ounces shredded cheddar cheese 
  • 1 pound top round steak (thinly sliced)

Step by step guide 

  • Place steak in the freezer for 15 minutes before cutting the slices
  • Top every baguette slice with 1 tbsp of provolone cheese. Boil until bubbles and set aside.
  • In butter, cook onion, celery and mushrooms until tender. stir flour and cook for 1 to 2 minutes. 
  • Add beef broth a little at a time stringing after each addition until smooth. Add green peppers, hot sauces and Worcestershire sauce. Simmer for about 10 minutes or until the veggies are softened. 
  • Now add cream and simmer for further 5 minutes. Remove the pot from the heat and whisk the cheese until melted.
  • At that time thinly sliced steak. Warm 1 tablespoon of olive oil on medium-high heat. Add beef and cook until color brown. 
  • Place beef bottom of every bowl and top with soup. You can serve with cheese toasts.

They are usually steamed, or pan fried. But for Potsticker soup I am going to skip both and cook them in the soup directly because I am adding frozen potstickers.

My potsticker soup recipe is simple, quickly made and very hearty on cold days. My whole family loves it. I hope you will also enjoy it as well. So let’s start cooking with me!

Tools You’ll Need

  • Stock pot.
  • Ladle.
  • Sharp knife.
  • Cutting board.

Ingredients

  • 1 tablespoon sesame oil
  • 1 onion, chopped
  • 2 cloves minced garlic
  • 2 (32 ounce) cartons chicken broth
  • 2 green onions, chopped
  • 1 tablespoon sesame oil
  • salt and pepper to taste
  • 1 (15 ounce)  pot sticker package frozen (any filling)
  • 1 (12 ounce) stir-fry vegetable package frozen 

Step by step guide 

Step 1

In a large pot, heat sesame oil over medium heat. Add the onion and garlic,cook for 5 minutes or until onion softens and translucent. Now add chicken broth, green onion, and sesame oil. High the heat and bring a boil, add salt and pepper to taste. 

Step 2

Decrease the heat to medium, add the frozen potstickers and fry vegetables. Cook for 8 minutes or until potstickers float.

Easy Thai red curry noodle soup with spicy and sweet broth, fresh lime juice and ramen noodles.

Ingredients you ‘ll need

  • 2 Tbsp. olive oil or avocado oil  
  • 1/2 cup diced yellow onion
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced carrots
  • 3 garlic cloves, minced
  • 1 Tbsp.  grated ginger
  • 1/4 cup red curry paste
  • 6 cups vegetable stock or chicken broth 
  • 1 (14 oz.) coconut milk (can full-fat)
  • 3 Tbsp. fish sauce
  • 4–5 oz. rice or ramen noodles (see note)
  • 1 Tbsp. fresh lime juice,  (more to taste)
  • 1/2 cup fresh chopped cilantro
  • Lime wedges, for serving

Instructions

  1. Heat oil in the Dutch oven over medium heat. Add onion, carrots and red bell peppers. Cook for about 5-7 minutes until tender. 
  2. Add garlic, ginger, and red curry paste. Cook until fragrant for 1 minute, stirring frequently.
  3. Add chicken broth, fish sauce and coconut milk. Add salt and pepper to taste. Bring a boil, cook for 5 minutes uncovered. Add the noodles and boil until tender. Cook time depends on the type of the noodles.
  4. Add cilantro and fresh lime juice. Soup is ready to serve!

Ingredients  

  • 1 large Butternut Squash, peeled and cubed 
  • 2 Carrots peeled and sliced
  • 1 Onion chopped
  • 4 cloves Garlic minced
  • 1 Apple cored and cubed
  • 1 Tablespoon Olive oil
  • 3-4 cups Vegetable Broth
  • 1 Tablespoon Fresh Sage chopped
  • 6 Sprigs Fresh Thyme
  • ½ teaspoon Celery Salt
  • pinch Cinnamon
  • pinch Nutmeg
  • pinch of Cayenne Pepper (optional)

For Garnishing

  • Freshly Ground Black Pepper
  • Fresh Thyme or Sage Leaves
  • Roasted Pepitas

Step by step Instructions

  • Heat the olive oil in a large pot over medium heat. Add the onion and  garlic and saute for 2 minutes. 
  • Add the carrots, squash, herbs, apple and 3 cups vegetable broth into the pot. Simmer it, reduce heat and boil for 20 minutes or until the vegetables soften.
  • Carefully remove the pot from the heat, now remove thyme sprigs. 
  • Blend the soup in a blender until smooth.
  • Ladle the soup in the bowls, garnish and then serve!

Notes 

  • If you don’t have an immersion blender you can use a traditional blender as well. 
  • If you like the thinner soup you can add 1 more cup of vegetable broth.
  • You can use any type of apple in this recipe. I used mcintosh .
  • When adding sweet or spices, taste them. In this way you will get the idea that you need to add more or not.

Ingredients

  • 6 tbsp. vegetable oil, divided
  • 8 oz. cremini mushrooms,  sliced and stemmed 1/4″ thick
  • 2 tbsp. plus 1/8 tsp. kosher salt, 
  • 6 oz. pad Thai rice noodles
  • 4 cloves garlic, minced
  • 2 tbsp. minced or grated ginger
  • 2 tbsp. red Thai curry paste 
  • 1 (14.5-oz)  unsweetened coconut milk( canned)
  • 1/4 c. low-sodium soy sauce
  • 3 tbsp. creamy natural peanut butter
  • 4 c. low-sodium vegetable broth
  • 1 small red bell pepper, seeded and sliced
  • 2 tbsp. fresh lime juice
  • 8 cilantro sprigs
  • 1 c. Thai or regular basil leaves
  • 1 c. unsalted roasted peanuts

Step by step guide 

  • Step 1

Heat 3 tablespoons of olive oil in a large pot over medium heat. Cook the mushroom until golden brown, for about 8-10 minutes. Add ⅛ tablespoon salt as seasoning. Transfer mushrooms onto a plate.

  • Step 2

During it, boil the water in the medium pot and add the remaining 2 tablespoons of salt and stir. Add noodles and cook for 5-6 minutes, stirring occasionally until smooth. Shift noodles in a medium bowl and toss with 1 tbsp oil, set it aside.

  • Step 3

In a same large pot, heat the remaining olive oil 2 tbsp over medium heat. Add garlic, ginger and curry paste and cook until fragrant  for 1 minute. Add milk, peanut butter and soy sauce until combined, stir occasionally.  Stir in broth or over high heat and bring a boil. Add a bell pepper, lower the heat and boil until tender, about 3 minutes. Add the lime juice and mushroom and stir. 

  • Step 4

Divide the noodles in each bowl. Add the peanut broth and veggies over. Top with cilantro, peanuts and basil.

When we cook the noodles in the soup broth they absorb all the broth and result in a pot full of creamy noodles, that is not soup.   • 3/4 cup pearl barley
  • 1 tablespoon extra virgin olive oil
  • 1 medium onion chopped
  • 2 small carrots chopped
  • 2 stalks celery chopped
  • 3 cloves garlic minced
  • 1 lb. cremini mushrooms sliced
  • 6 cups vegetable broth(low sodium)
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce 
  • 2 sprigs thyme or 2 teaspoons dried
  • 1 bay leaf
  • salt and pepper to taste

1. According to package instructions, cook the barley. This can take 30 minutes but can be cooked in advance.

2. Heat the oil in a large soup pot over medium heat. Add the celery, onion, carrots and garlic and saute for 5 to 8 minutes until the vegetables are softened and onion translucent. Now add the mushroom and  cook for another 5 minutes.

3. Add the broth Worcestershire sauce, tomato paste, thyme and bay leaf then bring to a boil. Add salt or pepper or barley for taste and slow the heat medium to low. Bring a boil for 15 minutes and stir frequently. 

4. Remove the pot from the heat and waste the bay leaf and thyme sprigs. Serve and enjoy!

Step 1

You do not need to pre-cook the barley in this method. Add the olive oil in the instant pot and press the saute button. Add the onion, carrots, celery, and garlic and cook for 5-8 minutes until the veggies soften. Now add the mushroom and cook for 5 minutes more. Add the broth, barley, Worcestershire sauce, tomato paste, thyme and bay leaf, salt and pepper to taste and stir.

Secure the lid and close the venting value. For 20 minutes set the instant pot to high pressure. When cooked, let the pressure naturally release for 10 minutes. When pressure is released remove the bay leaf and thyme sprigs and stir well.
