Ingredients for Potato Soup Recipe

  • 2 tsp oil
  • 1 medium onion,chopped
  • 3 whole carrots,clean & chopped
  • 3 stalks celery,chopped
  • 6 small potatoes ,peeled and chopped
  • ½ tablespoon salt 
  • Black pepper to taste
  • ½  tsp Cajun spice mix
  • 8 c low sodium chicken and vegetable broth
  • 3 tablespoon all purpose flour
  • 1.c milk 
  • ½  c. heavy cream
  • 1 tablespoon minced fresh parsley
  • 1 c. cheese of your choice

Instructions to make potato Soup

1.Step

Put the pot on medium-high heat and the onion, carrot and celery. Whisk and cook for 2 minutes, then add the chopped potatoes and cook for 5 minutes. Add the salt, pepper, and Cajun spices.

2.Step

Add the broth and bring to a gentle boil. Let it cook for 10 minutes or until the potatoes start to get tender. Stir together the milk and flour, then add it into the soup and cook the soup for another 5 to 10 minutes.

3.Step

Remove half of the soup and blend until completely smooth.( Cool the soup before blending).Add it back to the soup pot and whisk to combine. Allow the heat back up and taste the seasoning add more if needed. Stir in the cream, then parsley (reserving  the little for garnishing).

4.Step

Serve in the bowls,garnish with parsley,and cheese.
