There are ingredients which you need to make minestrone soup recipe:

  • 2 medium carrots,diced
  • 2 small zucchinis,diced
  • ½ large onion,diced
  • 6 diced celery stalks
  • 2 cloves of garlic
  • 28 oz canned diced tomatoes
  • 32 oz vegetable broth
  • 15 oz canned great Northern beans
  • 15 oz canned kidney beans
  • 1 tbsp Italian seasoning
  • 1 tbsp dry basil
  • ½ cups noodles
  • 1 tbsp olive oil
  • 2 cups water

Instructions to make Minestrone Soup

Step 1

Heat the olive oil in the pot,add zucchini,carrots,celery and onions.Saute the vegetable for 10 minutes until the vegetable softens. 

Step 2 

Add canned diced tomatoes into the pot.Season with Italian seasoning and dry basil.

Step 3

Add vegetable broth,noodles,kidney beans and Northern beans.Boil for about 10 minutes.If your soup is thick then you can add 2 more cups of water in it.

Step 4

Add garlic into the mixture and let it simmer for 10 minutes.Serve as warm.

Store leftover minestrone soup in an airtight container in the refrigerator for up to a week. Minestrone gets more tasty in the refrigerator because it’s marinated in the fridge. So, you can reheat and enjoy more taste richer and richer.
