Thai Red Curry Noodle Soup

Easy Thai red curry noodle soup with spicy and sweet broth, fresh lime juice and ramen noodles.

Ingredients you ‘ll need

  • 2 Tbsp. olive oil or avocado oil  
  • 1/2 cup diced yellow onion
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced carrots
  • 3 garlic cloves, minced
  • 1 Tbsp.  grated ginger
  • 1/4 cup red curry paste
  • 6 cups vegetable stock or chicken broth 
  • 1 (14 oz.) coconut milk (can full-fat)
  • 3 Tbsp. fish sauce
  • 4–5 oz. rice or ramen noodles (see note)
  • 1 Tbsp. fresh lime juice,  (more to taste)
  • 1/2 cup fresh chopped cilantro
  • Lime wedges, for serving

Instructions

  1. Heat oil in the Dutch oven over medium heat. Add onion, carrots and red bell peppers. Cook for about 5-7 minutes until tender. 
  2. Add garlic, ginger, and red curry paste. Cook until fragrant for 1 minute, stirring frequently.
  3. Add chicken broth, fish sauce and coconut milk. Add salt and pepper to taste. Bring a boil, cook for 5 minutes uncovered. Add the noodles and boil until tender. Cook time depends on the type of the noodles.
  4. Add cilantro and fresh lime juice. Soup is ready to serve!

Serving suggestions

serve the soup with lime wedges and fresh cilantro. Thai noodle soup can also be served with green onions and fresh basil as well. 

You can pair this soup with vegetable rice paper rolls, naan or flatbread, bean sprouts,  rice noodle salad, crunchy Thai peanut salad,  jasmine rice or Thai chicken and cabbage skillet. 

Storage instructions 

Leftover thai red curry noodle soup keep in an airtight container in the fridge for 4 days. I will not suggest freezing this dish. 

You can reheat it in the microwave or over the stove top. Garnish  with extra fresh toppings then serve!

No, curry paste has chili pepper that the curry powder don’t have so the curry paste is more spicy than the curry powder. Curry powder also has additional ingredients which curry powder don’t have.
