- 1 tablespoon olive oil
- 1 onion, diced
- 4 cloves garlic, minced
- 1 lb. Italian sausage, mild or spicy
- 5 PEI russet or white potatoes, cubed and peeled
- 6 cups chicken or vegetable broth
- 4 cups chopped kale, washed
- 1/2 cup heavy cream
- 1/2 teaspoon chili flakes
- Sea salt
- Black pepper

Step 1
In a large pot heat the half olive oil on medium heat.
Step 2
Add sausage into the pot and cook for 5 to 7 minutes until cooked or browned. When cooked, remove the sausage from the pot.
Step 3
Add remaining olive oil, and then onion and garlic cook for 3-4 minutes until smooth. Add a pinch of salt, chili flakes and cook for 30 minutes until fragrance.
Step 4
Add the broth and potatoes and stir to combine. Boil on low medium heat for 20-25 minutes until potatoes get smooth.
Step 5
When potatoes are cooked, remove roughly ⅓ of the potato and add to the blender, blend it until smooth.
Step 6
Add the cooked sausages to the pot and boil it for an additional 10 minutes. When cooked add heavy cream and kale stir and cook for 5 minutes until the kale is bright green color. Add salt and pepper to taste. Soup is ready to serve!
Store and Freeze
Let the leftover soup cool down , convert it in an airtight container and store in the fridge for up to 5 days.
