Green Soup

The best green soup is easy to make and taste guaranteed. This healthy soup will keep you warm in winter cold days and nights. 

Ingredients

  • 2 tablespoons extra-virgin olive oil, (need extra for garnishing)
  • 2 large yellow onions, chopped
  • 1 teaspoon salt, divided
  • 2 tablespoons plus 3 cups water, divided
  • ¼ cup arborio rice
  • 1 bunch green chard (about 1 pound)
  • 14 cups gently packed spinach,  any tough stems trimmed (about 12 ounces)
  • 4 cups vegetable broth, homemade or store-bought 
  • Big pinch of cayenne pepper
  • 1 tablespoon lemon juice, extra to taste 

Step by step guide 

Step 1

In a large skillet, heat 2 tablespoons of olive oil over high heat. Add onion and ¼ salt and cook for about 5 minutes or until the onion starts to brown, stir frequently. Reduce the heat and add 2 tablespoons of water and cover the pot. Cook, stirring frequently until the pan cools, cover the pot again until the onions are reduced and have caramel color about 25 to 30 minutes. 

Step 2

At that time add remaining 3 cups water and ¾ teaspoon salt in a soup pot. Add rice, bring to a boil. Reduce the heat to maintain the boil, cover the pot and cook for 15 minutes. Trim the white ribs of the chard. Chop the chard green and spinach coarsely. 

Step 3

Cook the rice for 15 minutes, then add the chard green. Go to the boil, cover the pot and cook for 10 minutes. When the onions are caramelized add a little boiling liquid into them. Add them with spinach, broth and cayenne into the rice. Return to the simmer, cover and cook, stirring until the spinach is smooth but still green in color, cook about 5 minutes more.

Step 4

Blend the soup in the immersion blender until smooth. You can also use a regular blender. Add 1 tablespoon lemon juice. Taste the soup and add more lemon juice if needed. You can garnish the soup with olive oil.

You can store the leftover soup, let it cool, then transfer it  in an airtight container and put it in the fridge for up to 4 days. And this green soup can be frozen for up to 6 weeks. Reheat on the stove until heated thoroughly.
