Heat the olive oil over a medium-high heat.Add tortilla strips in the oil and fry 30 seconds to 1 minute or until light brown.

Ingredients
- 1 tablespoon olive oil
- 1 chopped medium onion
- 3 cloves garlic
- 1(28 ounce) can crushed tomatoes
- 1 (10.5 ounce) can condensed chicken broth
- 1 ¼ cups water
- 2 teaspoon chili powder
- 1 teaspoon dried oregano
- 1(15 ounce) can black beans,rinsed and dried
- 2 large boneless chicken breast halves cooked and cut into bite size pieces
- 1 cup cooked whole corn kernels
- 1 cup white hominy
- 1(4 ounce) green chile pepper,can chopped
- ¼ cup chopped fresh cilantro
- ½ cup crushed tortilla chips oe to taste
- 2 medium avocado,sliced or to taste
- ½ cup shredded cheese ,or to taste
- 2 tablespoon chopped green onions,or to taste
Directions
Step 1
First of all heat oil in a stockpot over medium heat.Add onion and garlic saute for 5 minutes until soft.Whisk in chili powder and oregano.
Step 2
Add crushed tomatoes,condensed,broth and water and simmer it.Low the heat and simmer it for 5-10 minutes.
Step 3
Stir in cooked chicken,black beans,corn,hominy,chile peppers,and cilantro.Boil for 10 minutes.
Step 4
Pour soup into individual serving bowls, and top with crushed tortilla chips, Monterey jack cheese, avocado slice and green onions. Soup is ready, serve as warm.
