  • 2 tablespoons coconut oil
  • 1 medium chopped onion
  • 4 minced garlic cloves
  • 3 tablespoon minced ginger
  • 1 tablespoon mild curry powder
  • ¼ teaspoon crushed red pepper flakes,you can add more for taste
  • 1 (28 ounce) diced tomatoes
  • 1 cup dried french green lentils
  • 2 ½  cups water 
  • 1(14-ounce) coconut milk
  • ½ teaspoon sea salt,more for taste
  • Black pepper
  • ½ cup chopped cilantro
  • 2 tablespoons fresh lime juice

Step 1

Warm the oil in a large pot on medium heat.Add the onion into the pot and a pinch of salt and cook for 8-10 minutes until the onion gets soft and light brown in color around the edges.

Step 2

Add the garlic,ginger,curry powder,and red flakes and cook for about 2 minutes frequently stirring until fragrant.

Step 3

Add the tomatoes,lentils,water,coconut milk,½ teaspoon salt,and various grinds of black pepper.Bring to boil,cover the pot, cook for 25-35 minutes,stir occasionally ,until the lentils are softened.If your soup is too thick,then add half and 1 glass water to reach your desired constantly.

Step 4

Add the cilantro and lime juice.Seasoning to taste and add more if needed.Serve as warm.
