In this Soup Recipe you can add what you have in your hand. It can be anything like uncooked pasta, some barley, a bag of rice, maybe some frozen, canned or fresh vegetables and some potatoes which you use into any dish and some of them leftover. These all items are perfect in soup.

Method of making leftovers into soup: Step by step guide

First of all gather all the leftovers and other ingredients which you need to make soup. Here are step by step guide to make the soup:

Step 1: 

Heat olive oil in a pot. Add some flavors like onion, celery, garlic, and carrots if you have them. Cook them until they soften. 

Step 2: 

Add broth or stock which you have in your hand, otherwise just plain water is enough. You can use bouillon cubes if you don’t have broth or stock. 

Step 3:

Now you add any ingredients that take time to cook like raw potatoes, add them into the broth and let them cook. 

When they have cooked a bit, now add the vegetables, cooked meat and other leftovers you are having. You can also add at this point any pasta or grains you are using. 

Step 4:

Now the time is to add seasonings. You can use a seasoning packet if you have otherwise or any seasoning from your spice cabinet. Some options include Italian seasoning, garlic powder, cajun seasonings, chili powder, cumin etc, according to your taste. 

If you have any sauce in your hand then firstly add sauce and then seasonings. Start with a small amount of seasonings and add more if needed.  

Step 5:

Let the soup simmer until all ingredients are cooked and seasoning meld together. 

Step 6: 

If you want to make your soup creamy, you can add some cream and milk.  You can also add some instant potatoes and mashed potatoes.

Put the leftover soup in the freezer container for freezer bags. If you want to freeze in small portions then use a muffin pan.
