  • 4 tablespoon butter
  • 1 ½  chopped carrot
  • 1 diced medium onion
  • 1 28-oz. Can crushed tomatoes
  • 1 28-oz. Can tomato sauce
  • 1 small can tomato paste
  • Fresh basil chopped ( I use 14 leaves but you can add according to your choice)
  • 1 small carton of cream or half
  • salt/ pepper to taste
Step by step guide
  • Step 1

In a medium saucepan, melt the butter. Add the onion and carrots and saute until they are translucent.

  • Step 2

Add the basil, tomatoes, salt and pepper. Stir the soup, cover the pot and boil for at least 20 minutes on low heat, stirring frequently.

  • Step 3

Let the soup cool down and blend it until smooth. 

  • Step 4

Pour the blended soup back into the pot. Add the cream and butter until heated through over low heat. Soup is ready, enjoy it with crusty bread or salad!

Ingredients 

  • ¼ cup butter (regular or vegan)
  • 1 yellow onion, diced (~1 ½ cups)
  • 1 ¼ cups sliced celery
  • 1 ¼ cups sliced carrots
  • 1 ½ teaspoons Italian seasoning 
  • 1 teaspoon kosher salt
  • ½ teaspoons ground black pepper
  • 1 tablespoon fresh lemon juice
  • 6 cups vegetable broth
  • 3 cups chopped spinach
  • ¾ cup frozen or fresh peas
  • 2 tablespoons chopped parsley

Dumplings

  • 1 cup all purpose flour
  • ½ tablespoon baking powder
  • ¾ teaspoon kosher salt
  • 2 tablespoons butter, cut into half  pieces (vegan or regular)
  • ⅓ cup warm water (~100˚ F)

Step by step Instructions

Vegetable Dumpling Soup

  • Step 1 

In a large pot melt the butter over medium heat. When melted add the onion, celery, carrots, italian seasonings and pepper and salt. Saute for 6-7 minutes or until vegetables start to soften. 

  • Step 2 

Now add the lemon juice and vegetable broth. Bring to a boil, low the heat,cover the pot and boil for 15 minutes.

  • Step 3 

While the soup is boiling, make the dumplings. In a bowl add flour, baking powder and salt and stir them well. In the flour mixture add the butter, by the help of hands cut the butter into the flour make sure no big lumps remain.

  • Step 4 

Add the warm water and by hand continue to mix the dumpling mixture until it comes together. 

  • Step 5 

Stir the peas, parsley, and spinach into the soup. 

  • Step 6 

Form dumplings into small rounded shapes.Then add them to the soup. Simmer the soup again to reduce the heat and cover.

  • Step 7 

Cook the dumplings until they become soft from the outside and chewy on the inside, about 18-20 minutes. Stir the soup frequently or so while the dumplings. Soup ready to serve!

Notes 

  • You can add the other leafy vegetable in the place of spinach like kale or swiss chard.
  • Italian seasoning blends generally contain basil, oregano, rosemary, thyme and sage. If you don’t have this  combination, then you can add in the soup a mix of these dried herbs.
  • If you are not vegan then you can simply add leftover shredded rotisserie chicken or italian sausages.
  • Feel free to add other vegetables like  green beans, corn, broccoli, cauliflower etc.

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 lb. Italian sausage, mild or spicy
  • 5 PEI russet or white potatoes, cubed and peeled
  • 6 cups chicken or vegetable broth
  • 4 cups chopped kale, washed
  • 1/2 cup heavy cream
  • 1/2 teaspoon chili flakes
  • Sea salt
  • Black pepper

Tuscan Potato Soup

Step 1

In a large pot heat the half olive oil on medium heat. 

Step 2

Add sausage into the pot and cook for 5 to 7 minutes until cooked or browned. When cooked, remove the sausage from the pot.

Step 3

Add remaining olive oil, and then onion and garlic cook for 3-4 minutes until smooth. Add a pinch of salt, chili flakes and cook for 30 minutes until fragrance.

Step 4

Add the broth and potatoes and stir to combine. Boil on low medium heat for 20-25 minutes until potatoes get smooth. 

Step 5

When potatoes are cooked, remove roughly ⅓  of the potato and add to the blender, blend it until smooth. 

Step 6

Add the cooked sausages to the pot and boil it for an additional 10 minutes. When cooked add heavy cream and kale stir and cook for 5 minutes until the kale is bright green color.  Add salt and pepper to taste. Soup is ready to serve!

Store and Freeze

Let the leftover soup cool down , convert it in an airtight container and store in the fridge for up to 5 days.

  • ½ onion chopped
  • 2 cloves garlic,chopped
  • 2 quarts water
  • 4 teaspoon chicken bouillon granules
  • 1 teaspoon salt or to taste 
  • ½ teaspoon black pepper
  • ½ head cabbage,cored and coarsely chopped
  • 1(14.5 ounce) can Italian style stewed tomatoes,diced
  • 1 tablespoon parsley for garnishing

Step by Step Guide

Heat the olive oil in a large stockpot over medium heat. Add onion and garlic cook for 5 minutes until onion is transparent.

Step 2

Stir bouillon,salt,and pepper in water.Boil it then stir cabbage in it.Boil about 10 minutes until cabbage wilts.

Add tomatoes,boil it for about 15 to 30 minutes, stirring frequently.

  • ½ large onion,diced
  • 6 diced celery stalks

  • 28 oz canned diced tomatoes
  • 32 oz vegetable broth
  • 15 oz canned great Northern beans
  • 15 oz canned kidney beans
  • 1 tbsp Italian seasoning
  • 1 tbsp dry basil

Heat the olive oil in the pot,add zucchini,carrots,celery and onions.Saute the vegetable for 10 minutes until the vegetable softens.

Add canned diced tomatoes into the pot.Season with Italian seasoning and dry basil.

  • 2 tsp taco seasonings
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1 tsp chili powder
  • 400g (14oz) tomatoes chopped
  • 2 tbsp tomato paste
  • 4 cups stock/water
  • 2 cups corn
  • 400g (14oz) black beans drained
  • Pinch of sugar
  • Salt and pepper to taste
  • Toppings
  • Grated cheese
  • Sour cream
  • Avocado
  • Cilantro
  • Crumbled feta cheese
  • Shredded cheddar cheese

Step by step Instructions

Heat the large pot and add a few tablespoons of oil over medium high heat.

  • 1 tablespoon mild curry powder
  • ¼ teaspoon crushed red pepper flakes,you can add more for taste
  • 1 (28 ounce) diced tomatoes
  • 1 cup dried french green lentils
  • 2 ½  cups water 
  • 1(14-ounce) coconut milk
  • ½ teaspoon sea salt,more for taste
