Jambalaya Soup

  • 2 tablespoons unsalted butter
  • 14 ounces kielbasa sliced
  • 1/2 yellow onion diced small
  • 2 celery ribs diced
  • 2 cloves of garlic minced
  • 1 red pepper diced
  • 1 green pepper diced
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons tomato paste
  • 28 ounces can undrained diced tomatoes 
  • 6 cups chicken stock
  • 2 bay leaves
  • 1 cup instant rice
  • 2 cups cooked chicken or turkey

Step by step guide

  • Step 1

In a large pot melt the butter over medium heat. Add the kielbasa and let it cook until brown. Now add onion and garlic and cook for 1 minute. 

  • Step 2

Now add celery, green pepper and red pepper. Saute and stir for about 5 to 7 minutes until the vegetables are smoother. 

  • Step 3

Now add Cajun seasonings, and add salt and pepper. Stir the vegetables, tomatoes and tomato paste.

  • Step 4

Now slowly add the chicken stock. Add in the bay leaves now. Let it simmer for 10 minutes. 

  • Step 5 

Add the rice and cooked chicken/turkey into the soup. Let it boil until the rice is softened, about 5 minutes.  Remove bay leaves, soup is ready to serve.

Storing and freezing of Jambalaya soup

Let the leftover soup cool down then transfer it to an airtight container in the refrigerator for up to 5 days.

To freeze it, convert the cold soup in the air tight container and freeze it.
