- 1 tablespoon olive oil
- 1 small onion, diced
- 3 stalks celery, diced
- 3 cloves garlic, minced
- 2 carrots, shredded
- 1 pound cooked, cubed chicken breast
- 4 cups chicken broth
- 1(16 ounce) package mini potato gnocchi
- 1 (6 ounce) bag baby spinach leaves
- 1 tablespoon cornstarch(optional)
- 2 tablespoon cold water (optional)
- 2 cups half-and-half cream
- Salt and black pepper to taste
Step by step guide
Step 1
Heat oil in a big pot over medium heat.Add carrots, celery, onion, and garlic in hot oil and cook until onion is colorless,about 5 minutes.Stir in chicken broth and cubes chicken and simmer it.
Step 2
Add gnocchi into the soup and let it cook until they begin to float, about 3 to 4 minutes.
Add the spinach and cook for 3 minutes until it wilts.
Step 3
In a measurement cup stir cornstarch into cold water until smooth.Add the cornstarch into the mixture and half and half into the soup. Cook for about 5 minutes until the soup thickens slightly. Add salt and pepper. Serve it warm.

To store the chicken gnocchi soup, first let it cool then place it in an airtight container in the refrigerator for up to 3 days.
