Cream of Zucchini Soup recipe

Ingredients:

1 ½ lb Zucchini, cut into ½-inch pieces.
1 ½ cup of Canned low-salt chicken broth or water.
¼ cup of Whipping cream.
1 tablespoon of Grated Parmesan cheese.
¼ teaspoon of Ground nutmeg.

Preparation Instructions:

1. In saucepan bring the Zucchini to the boil. Reduce the heat to medium, cover and simmer for about 15 minutes.
2. Puree the zucchini in blender until almost smooth. Return to the same saucepan.
3. Add the cream, nutmeg and cheese. Stir over medium heat until warmed through. Season with salt and pepper.
