Chilled Bloody Mary Soup recipe

Ingredients:

2 ½ cups vegetable juice
1 cup finely chopped ripe tomatoes
½ cup finely chopped jarred roasted bell peppers
½ cup finely chopped celery
1 tablespoon olive oil
1 tablespoon fresh lime juice
1 teaspoon balsamic vinegar
1 teaspoon sea salt
½ teaspoon minced jalapeno pepper
¼ cup sour cream, for serving
1 tablespoon chopped fresh chives, for serving

Preparation Instructions:

1. Combine vegetable juice, tomatoes, bell peppers, oil, lime juice, vinegar, salt, and jalapeno in a large bowl; stir well to combine. Cover and refrigerate 2 hours for flavors to blend.

2. To serve, ladle soup into chilled bowls and top with dollop of sour cream and chives.
